Fennel and Arugula Salad

Like most salads, this one can be modified to fit the current season’s produce. If arugula isn’t available, watercress or curly endive makes for good substitutes. For the sweet component, you can substitute the blackberries with strawberries or raspberries or even grilled peaches.

Ingredients

1/4 cup smoked salmon, shredded in small pieces
1cup arugula
2 cups spring mix
1 cup English cucumber, peeled and chopped
1/2 cup fennel, shaved
2 tablespoon red onions, sliced thinly
1/2 cup blackberries, quartered
chili lime vinaigrette

Directions

In a large bowl gently toss all the ingredients with the vinaigrette. Serve immediately.
